Walk in and the decade changes: chandeliers rescued from Miami’s old Fontainebleau hang from a ceiling twenty-eight feet up, palms throw shadows over deep leather banquettes, and the lighting is calibrated for cigarette-smoke glamour that no longer exists. Butcher and Singer is Stephen Starr’s supper-club fantasy — a steakhouse where a martini feels less like a drink and more like a costume.
The Story
The building near Rittenhouse dates to the early 1900s, when it housed a national bank and later the Butcher and Singer stock brokerage that lends the restaurant its name. Starr, who had run the acclaimed Striped Bass in the same space, reimagined it in 2008 as an homage to 1940s Hollywood: parquet floors, dark wood, an ornate chandelier and a dining room engineered for entrances.
What to Order
Dry-aged steaks and chops are the spine of the menu, seared hard and served with old-school ceremony. Seafood plays the classic supporting role — this room once housed one of the city’s great fish restaurants, and the instinct survives. The finale is non-negotiable: baked Alaska, torched tableside, a dessert as theatrical as the address deserves. Drink accordingly — martinis, manhattans and the brown-spirits canon.
The Space
One grand room rather than many small ones: soaring ceiling, crystal chandeliers with Fontainebleau pedigree, potted palms, parquet and shadow. It photographs like a film set because it essentially is one — dinner here comes pre-scored.
