Butcher and Singer is Stephen Starr&#8217;s supper-club fantasy \u2014 a steakhouse where a martini feels less like a drink and more like a costume.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"The_Story\"><\/span>The Story<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>The building near Rittenhouse dates to the early 1900s, when it housed a national bank and later the Butcher and Singer stock brokerage that lends the restaurant its name. Starr, who had run the acclaimed Striped Bass in the same space, reimagined it in 2008 as an homage to 1940s Hollywood: parquet floors, dark wood, an ornate chandelier and a dining room engineered for entrances.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"What_to_Order\"><\/span>What to Order<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Dry-aged steaks and chops are the spine of the menu, seared hard and served with old-school ceremony. Seafood plays the classic supporting role \u2014 this room once housed one of the city&#8217;s great fish restaurants, and the instinct survives. The finale is non-negotiable: baked Alaska, torched tableside, a dessert as theatrical as the address deserves.
